  • Brown Sugar Carmel Pound Cake

  • 1 1/2 c unsalted butter softened
  • 2 c light brown sugar, packed
  • 1 c sugar
  • 5 large eggs
  • 3 c all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 c whole milk
  • 1 bag(s) 8oz bag toffee chips
  • 1 c pecans, in pieces
  • CARMEL DRIZZLE
  • 1 can(s) sweetened condensed milk
  • 1 c brown sugar, firmly packed
  • 2 Tbsp unsalted butter
  • 1/2 tsp vanilla

  • How to Make It

  • Preheat oven to 325 spray a 12 cup Bundt pan with cooking spray with flour.
  • Beat butter until creamy. Add sugars beating until fluffy. Add eggs one at a time.
  • In medium bowl combine flour, baking powder and salt. Add flour mix to batter alternately with milk, beat until just combined
  • Stir in toffee buts and pecans. Spoon batter into pan and bake 85 minutes or until wooden pick comes out clean. To prevent excess browning, cover cake with foil while baking.
  • Let cake cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack. Spoon Caramel Drizzle over cooled cake.
  • Directions for Caramel Drizzle
  • In a medium saucepan, combine condensed milk and brown sugar; bring to a boil over medium-high heat, whisking frequently. Reduce heat, and SIMMER for 8 minutes, whisking frequently.
  • Remove from heat; whisk in butter and vanilla. Let cool for 5 minutes before using.
  • NOTE: Make sure you drizzle the caramel while it’s still HOT. When cooled the caramel does somewhat harden. NOTE: Fill pan as you would any other cake leaving room for it to rise, you may have some batter left over. NOTE: I have had comments that the toffee bits tend to sink and may cause the cake to stick to the pan. It has been suggested that you dust the toffee bits with flour and grease pan with Crisco not a cooking spray.

  • Ring Ding Cake

  • 1 box devils food cake mix
  • 8 oz cream cheese softened
  • 3 cup powdered sugar
  • 1 stk butter softened
  • 8 oz cool whip
  • 1 container milk chocolate icing

  • How to Make It

  • Prepare and bake cake as directed on box. Use 2 round cake pans.
  • For the filling, mix the butter and cream cheese until smooth. Add powdered sugar and fold in cool whip.
  • After cake is completely cooled, split layers and spread filling on each layer and stack, do not spread filling all the way to the edge of the cake, as the weight of the cake will press it out to the edge once you are finished (this keeps the filling from mixing with the icing). Tip: you can place the uncut cakes on plates in a freezer for about 30 minutes to make a cleaner cut.
  • If you have any filling left over you can mix it with the icing. It’s what we do. Then ice entire cake with the chocolate icing. You will be able to put a thick layer of filling between the layers and try not to be stingy.

  • Bakery Quality Cake From A Box!!

  • Check out the directions on the cake mix.
  • Add one more egg (or add 2 if you want it to be very rich)
  • Use melted butter instead of oil and double the amount.
  • Instead of water, use milk.
  • Add 1 t Vanilla
  • AND
  • Add 2 t Butter Flavor
  • (if it is a vanilla, white, chocolate or cherry cake, also add 1/2 t Almond Extract)

  • How to Make It

  • Mix well and pour into a 9 x 13 cake pan that has been greased and floured.
  • Wrap the pan with insulated cake pan strips>>>you can buy them at walmart.
  • Or just ripped up an old thick towel. Tear into strips about 2-3" wide. Make a strip long enough to fit around any pan you use. If you need to piece it together to make it fit, use sewing pins (straight pins).
  • Soak the strip with cold water and wring it out a little...wrap your pan with it. The strips keep the pan edges from heating up too fast and will allow the cake to rise evenly all the way out to the edges of the pan...no more hard edges on your cakes
  • Bake for the time recommended on the box, until toothpick inserted in center of cake comes out clean!

  • 1 C light mayonaise or greek yogurt (I have done 1/2 of each as well)
